Hotels like Don Totu.

Don Totu is the Salento insider's address: a restored noble house in San Cassiano, a village most itineraries miss, with vaulted suites around a walled garden and a pool where the orchard was. It is small, and it books out.

Palazzo Daniele is half an hour further south and runs the same idea at palazzo scale: frescoes overhead, rooms left almost bare, art where the furniture used to be. If Don Totu is full, or you want the stranger version, start there.

We have not slept at Don Totu, so it is not in the collection. Nothing joins without a stay we can vouch for, and hotels cannot pay to be listed.
